A quick google search of parsley will show you that this leafy green vegetable is more than just a decorative item for your dish! Parsley is one of my favorite greens- chock full of vitamins, including Vitamin C, B 12, K and A. Parsley is great for your immune system, blood pressure and skin and bones. One great way to incorporate some parsley into your diet is through salads. In this salad recipe, parsley holds down the fort with some cucumber, green onion, tomato, pepper, and lemon dressing. Its a fresh, palate cleansing salad that can be a great side or a meal of its own.
Green Goodness Salad
1 bunch parsley leaves chopped (flat or curly- your choice!)
1 cucumber diced
1 red pepper diced
3 green onions diced
1 medium tomato diced
1 avocado cut into small pieces (optional)
1 lemon juiced
1 tbsp olive oil
salt & pepper to taste
Mix all the vegetables together in a bowl. Top with lemon juice and olive oil, salt and pepper to taste. Mix well and serve! For a heartier meal, add a grain like quinoa or bulgar!
