The main star of this recipe is bok choi, the cruciferous leafy green vegetable full of protein and fiber and low in calories. Bok choy is a member of the cabbage family and is one of the highest nutritionally ranked vegetables! Bok choy provides good, very good, or excellent amounts of 21 nutrients- including beta carotine, omega 3s and zinc! Another stand out vegetable in this recipe is cabbage. Cabbage contains sinigrin which is a glucosinolate- a compound shown to have cancer preventative elements! And the best part is it only works when the cabbage is raw- as it is in this salad. Top those nutritional powerhouses with some sweet mango which also has many cancer preventative compounds as well as cholesterol lowering compounds, digestive enzymes and a plethora of vitamins, and you have one heck of a nutritious salad! Never mind that it also tastes amazing :-)
Ingredients
1 bunch bok choy cleaned and cut into small pieces
1/2 cabbage shredded (purple looks prettiest but any cabbage willl do!)
1 mango diced
1/2 red onion sliced
1 red pepper sliced
1/4 cup shredded carrots
3 scallions chiopped
1/4 cup cilantro chopped
Dressing
1/2 mango diced
2 tbsp lime juice
2 tbsp apple cider vinegar
2 tbsp olive oil
1/4 tsp chilli flakes
1/4 tsp sea salt
Mix the bok choy, cabbage, mango, onion, pepper , carrots and scallions in a large bowl
To make the dressing, place all ingredients in a food processor or blender and mix well.
Pour dressing over salad and mix well. Top with cilantro
