Every summer we have people over for barbecues, pack lunches to take to the beach, or visit with friends where we bring a dish of something to share. This summer slaw is an easy to prepare, delicious replacement for store bought cole slaw, which is usually filled with all sorts of unnecessary ingredients like oils, mayo and sugars. Its a crunchy, tangy and sweet combo that lasts for days in the fridge, to be nibbled on continuously until its gone. Not only does it taste great, but it looks great too!
Summer Slaw
1/2 head of green cabbage, shredded
1/2 head of purple cabbage shredded
1 cup grated carrots
2 red/orange/yellow bell peppers sliced thin (these are best cut on a mandolin)
1 red onion sliced thin (mandolin as well if you can!)
Dressing:
1/2 cup apple cider vinegar
1/4 cup sweetener of choice- I like to use brown sugar for this, but you can use coconut sugar, maple syrup, or agave as well
2 tbsp olive oil
salt & pepper to taste
Mix the veggies together in a large bowl. In a separate bowl, dissolve the sugar in the vinegar. Add some salt and pepper and the olive oil and whisk well. Pour over salad to cover and mix well. Refrigerate for 30 minutes before serving. Additional great toppings are Gomasio (Japanese sesame seed seasoning), green onions, or nuts!
