Lemon Dressing


Lemons aren't vegetables but they make a wonderful compliment to them! You can use lemons to add a delicious citrus flavor to almost any vegetable- whether you are cooking the veggies or eating them raw! I love to squeeze half a lemon over sauteed zucchini, peppers and mushrooms with garlic and onions in a stir fry. I also love to use a squeeze of lemon over a salad as a dressing! Here's a quick and easy salad dressing you can make with lemons to add a low calorie, healthful flavor to your food!

Sweet Lemon Vinaigrette

2 tablespoons lemon juice (you can use the juice of one whole lemon)

1 teaspoon honey (optional)

1 teaspoon apple cider vinegar (optional)

1 tablespoon olive oil

pinch of salt

pepper to taste

Whisk all ingredients together in a small bowl. Voila! Sweet Lemon dressing!

You can also make the same dressing with limes, oranges or grapefruit for another delicious citrus flavor.
